Gireum tteokbokki
This is a Korean dish of rice cakes fried in oil with spring onions, lots of Korean chilli paste (gochujang) and chilli powder (gochujaru). I’ve not come across this version in the UK but had it in Seoul in 2019 and make it my mission to learn how to make it on my return home, it’s so moorish and just satisfying!
Rocky road
This is one of those treats which is delicious, doesn’t need baking, is super quick and is more or less fool proof. Great one for kids to help with.
Coconut sticky rice with fresh mango
Hands down this is my favourite Thai dessert. I love the wonderful balance of the sweet, sticky coconut rice with a hint of salt combined with juicy, fresh mango.
No churn raspberry and white chocolate chip ice cream
This ice cream is very easy to make. It can be in the freezer within 10 minutes of starting. It’s super creamy and packed full of raspberries which offset the sweetness of the ice cream. As this is raspberry flavoured I couldn’t resist throwing some white chocolate in there as well, it’s just a flavour combo that is a match made in heaven!
Lemon and blueberry crème brûlée
This dessert is surprisingly easy to make and can mostly be made well in advance making it a good option for a dinner party. It looks impressive yet means not too much faffing away from guests. It’s also got built in portion control! I love the addition of the blueberries in the bottom but you could leave these out if preferred.
Kale crisps
I love normal crisps made of potato, but the problem is I could mindlessly eat a whole big bag and we all know they’re not the healthiest for us. Kale crisps provide a far healthier alternative, baked in the oven you can control the amount of oil and salt used. They’re also super easy to make!
Summer berry jelly
This is such a stunning looking dessert, perfect for a hot summer day when you don’t fancy a heavy dessert but want something more than just fruit. This can be served with cream, ice cream, yoghurt or just eaten on its own. I’ve seen similar recipes that use sparkling wine or even champagne but I have used sparkling grape juice here to make it non-alcoholic.
Salted caramel ice cream
This salted caramel ice cream is rich and creamy, with a deep caramel flavour. The salt offsets the sweetness perfectly. It’s great on it’s own but even better with a variety of toppings. My favourites are caramel sauce, caramel waffles, chocolate chips and some chopped nuts. It’s really nice with some popcorn or wafers too, basically anything!

Chocolate and cherries make a classic combo, try these very indulgent cookies for a change from the usual flavour combos.
Tennis themed matcha cupcakes with mini white chocolate and lime macarons
This cupcake is tennis themed and a tribute to Wimbledon! The cupcake is a matcha cupcake with matcha buttercream icing made to look like grass and they are topped with a tennis ball macaron which is filled with a white chocolate and lime ganache.
Peach melba (peach and raspberry) scones
Peach melba scones or in other words peach and raspberry scones. When you fancy a really fruity scone that needs no accompaniment and works as breakfast or a snack, this has got to be one to seriously consider making. I also have them with cream and jam when I want a really indulgent treat, perhaps given there is already a lot going on by scone standards this is gilding the lily, but when they taste this good, who cares!
Double layer pavlova
How can you make a pavlova even more spectacular? Double layer pavlova! Meringue, cream and loads of summer berries, this is a real showstopper of a dessert which will suitably impress at any event. The best thing is, it’s incredibly easy to make.
White chocolate and raspberry brownies
It’s hard to believe but I have been making these brownies for over 15 years and have not found a better brownie recipe to date. There is something so perfect about them, I think it’s the gooey, intense dark chocolate brownie mixed with the combination of sweet white chocolate and tart raspberries that are dotted throughout that just can’t be beat.
Konditor’s Curly Wurly cake
Konditor is a London based cake shop with several branches across the city, it’s been a favourite of mine more or less since I moved to London! This is my attempt at one of their signature bakes, a rich, dark chocolate cake layered with vanilla bean cream cheese frosting and decorated with swirls of dark chocolate.
Coffee and walnut cake
Konditor is without doubt my favourite cake shop in London and so when they released their coffee and walnut cake recipe on their blog, I had to give it a go.
