Konditor is a London based cake shop with several branches across the city, it’s been a favourite of mine more or less since I moved to London! This is one of my favourite risotto recipes and meat-free. It is such a satisfying meal and the fresh parsley and lemon really brightens it up.

An easy one tray dish. If you want to speed up the overall cooking time you could par boil the potatoes first before roasting, but that does mean that extra bit of washing up.

I do always like to add some beans or a pulse to this as I feel it makes the salad much more substantial and so keeps me satisfied.
