Grilled cheese kimchi on toast

Kimchi cheese on toast, makes a great lunch, especially topped with a fried egg, the sriracha hot sauce gives an extra kick as well.

This kimchi cheese on toast recipe is really simple, great when you’re not in the mood to cook.

Time: less than 10 minutes

Ingredients

This is my kimchi of choice at the moment.

  • 2 slices of bread

  • 2 tablespoons of kimchi

  • Thin slices of mature cheddar, enough to cover your toast (probably about 70g)

  • 1-2 eggs for frying

  • ½ a  spring onion finely sliced

  • Sprinkling of toasted sesame seeds

  • Sriracha hot sauce

Instructions

  1. Turn on the grill to high.

  2. Toast the bread, I don’t usually butter it, a lot of recipes suggest you do but I prefer to cut down the calories. There’s already a lot going on with the kimchi, cheese and egg, I feel the butter gets lost anyway.

  3. Heat a frying pan with a little oil and once hot, start frying the eggs to your liking.

  4. Put the toast on a baking tray, then place the kimchi on the toast, taking it to the edges, else the toast can burn where the edges are exposed.

  5. Place the cheese on top of the kimchi and grill until the cheese melts and starts to get a little colour.

  6. Transfer the toast to a plate, top with the fried egg(s).

  7. Scatter the spring onions and toasted sesame seeds on top and then finish with the sriracha hot sauce.

Fried eggs are always best with a runny yolk in my humble opinion :)
