Tomato and mozzarella (Caprese) salad
Ok, I don’t think this really counts as a recipe, yet it’s one of those where the final dish tastes much better than the sum of its very simple parts, so I just thought I’d post it as it’s gotta be tried. A drizzle of balsamic vinegar wouldn’t go amiss at the end either if you fancy some extra acidity.
Serves 2
Time: less than 5 minutes
Ingredients
2 large, ripe tomatoes
1 ball of mozzarella
Small bunch of basil leaves, around 12 leaves picked and rinsed
Extra virgin olive oil
Salt and pepper
Method
Rinse the tomatoes and then slice them horizontally to about 5mm width slices.
Slice the mozzarella in to similar widths.
Arrange on a plate with the basil leaves then drizzle with olive oil and add a crack of salt and pepper.
